Recipe: Grilled Chicken Salad with Lemon Dressing

Ingredients:
2 boneless, skinless chicken breasts π
4 cups mixed greens (lettuce, spinach, arugula) π₯
1 cucumber, sliced π₯
1/2 red onion, thinly sliced π§
1/4 cup feta cheese, crumbled π§
1/4 cup walnuts, chopped π°
1/4 cup olive oil π’οΈ
2 tablespoons lemon juice π
Salt and pepper to taste π§
1/4 cup pine nuts π°
1/4 cup Parmesan cheese π§
2 cloves garlic π§
1/4 cup olive oil π«

Instructions:
Grill the chicken breasts until cooked through and golden brown. Slice into strips and set aside.
In a large bowl, combine the mixed greens, cucumber, red onion, feta, walnuts, pine nuts, and Parmesan.
In a small bowl, whisk together the olive oil, lemon juice, garlic, salt, and pepper to create the dressing.
Toss the salad with the dressing until well-coated. Top with grilled chicken slices and serve immediately.
